Homemade Pineapple Soft Serve Ice Cream



+Preparation 15 minutes
+15 minutes cooking
+3 hours cooling
+Freeze for 3 hours

* Ingredients

° 4 egg yolks
° ½ cup (125 ml) sugar
° 1 cup (250 ml) hot milk
° 1 c (250 ml) 35% cream, hot1 vanilla bean, halved lengthwise

* Preparation :

In a bowl or at the top of a double boiler, remove from heat and whisk in egg yolks and sugar until mixture turns white. With the tip of a knife, whisk together the milk, cream, pods, and vanilla beans that have been removed from the capsule.

Cook in a double boiler, stirring with a wooden spoon, for 15 minutes or until mixture coats the back of the spoon. Remove the vanilla pod, cover it and let this custard cool in the fridge.

If you are working with an ice cream maker, stir the mixture according to the manufacturer's instructions. Freeze (about 45 minutes).

If you don't have an ice cream maker, pour mixture to  deep dish also leave it in freezer for 2 h . Stir also freeze again about an 1 h . Pass ice creams to food processor also return them to freezer to ready to serving .
