HOMEMADE TURTLE CANDY WITH PECANS & CARAMEL


Caramel, chocolate, pecans...Do these ingredients ring a bell? Yes! The famous Turtle Chocolate! Unique, exciting and comforting taste.

* Ingredients :
° 250g pecans (roasted, unsalted or unsalted) 8 ounces
° 25 unwrapped caramel squares (about 1 cup, 250 g)
° 1/4 cup (65 ml) heavy cream
° 16 ounces (500 g) melted coarsely chopped chocolate (dark or milk)
° Optional: sea salt

* Preparation:
Line two baking sheets or two large trays with parchment paper.
Making small piles pecans, using 5 to 6 piece per pile. (Lay a layer of pecans so the caramel doesn't seep inside.)
In  microwave-safe bowl, adding caramel, & half of cream, also heat on high until melt, pausing every 30 seconds to stir, for 3 to 4 minutes in total, or until caramel is well-cooked.  If blend seems thick & require more cream, adding rest.
Add about 1 tablespoon (15 ml) of caramel to the top of each pecan mound. For reservations.
Pour 8 ounces (250 g) of chocolate into a microwave-safe medium bowl and melt while heating, about 1 minute on high power, 15 seconds at a time, until chocolate is well melted.  Melt additional chocolate, if necessary.
Adding for 2 tsp (30 mL) of chocolate to top of every pecan batch, covering on top & set on sides.
Adding pinch of sea salt to every turtle if wanted .
Let the turtles harden at room temperature (this will take several hours) or in the refrigerator or freezer (about 15 minutes) before serving.
