SpicySalmon & LobsterFried Rice

A new recipe (whole dish) inspired by the classic Cantonese rice recipe. Here is a complete dish, soft rice with eggs, salmon, vegetables and a little lemon zest. You will be able to customize this recipe with ingredients available at home. Frozen, fresh or canned vegetables, fish, shrimp, tofu, chicken... it's up to you.

* Ingredients list

° 400 grams of cooked rice (100-150 grams of cooked rice per person)
° 1 lemon
° 3 eggs
° 2 steak salmon
° 2 carrots
° 1 onion
° 1 stalk of celery (optional)
° 1 cup canned corn
° 1 cup frozen, canned, or fresh peas
° 3 tablespoons. salted soy sauce
° Vegetable oil (sunflower or sesame for example)
° Salt and Pepper

* Recipe steps
Cook salmon in a little sesame oil, then crumble and set aside, reserving the fat. If you use tofu, shrimp, chorizo, chicken or sausage, do the same
Fry the chopped onions in the remaining fat, then add the carrots and celery stalks cut into small cubes after 3 minutes, fry for 5 minutes
Then add the soy sauce and lemon juice, then the cooked rice and mix well
We beat the eggs in a bowl, and pour it over the rice, stirring constantly, the eggs will cook around the rice and make it very soft
Finally add the peas, corn, and possibly chopped aromatic herbs (parsley or coriander leaves)
Add salmon (or any other ingredient) and mix with salt/pepper before serving as needed
