Cornbread dressing

* Ingredients :

° 375 ml (1 ½ C) fine cornmeal (#240)
° 375 ml (1 ½ C) unbleached all-purpose flour
° 45 ml (3 tsp) sugar
° 10 ml (2 tsp) baking powder
° 5 ml (1 tsp) baking soda
° 5 ml (1 tsp) of salt
° 430 ml (1 ¾ cup) buttermilk
° 3 eggs, light scrambled
° 60 ml (cup) melted unsalted butter

* Preparation :

Placing grill in middle of oven. Heat oven 180°C (350°F). Generous 25 cm (10 in) cast iron butter or non-stick skillet.
In  bowl, blend dry ingredients. Making hole also pour in curd and eggs. Blend well with paddle. Enter butter.
Pour to skillet. Baking for 30 min .  Serving warm or cold with hot pepper or soup.
