Brown-Caramel-Pound-Cake


Here the apple pound cake is decorated with caramel, hence the name Tatin. Moreover, it is served with a delicious salted caramel sauce. It just goes to show that cakes that are very simple at the base can become true treasures of indulgence.

*ingredients :

°700 gm golden apple
°40 grams butter
°100gm fine sugar
°four quarters
°110 grams butter
°110g fine sugar
°110 grams of eggs
°110g flour T55
°3 grams of baking powder
°Salted Caramel Butter
°50 grams glucose
°100gm fine sugar
°300 grams of liquid cream
°50gm semi-salted butter

* instructions :

Heat the oven to 170 degrees.  
Peel and core the apple, then cut it into 8.
In a saucepan, melt the butter. When become foamy, adding powder sugar and let to it caramelizes.
Arrange the apples at the bottom of a twisted circle. Pour caramel over it and cook for 20 minutes. Firmly pack apples at end cooking .
four quarters
Mix the flour and sift it with the baking powder.
Cream the butter with the sugar, then add the eggs and flour/yeast mixture.
Pour the dough over the caramelized apples and bake for 30 to 40 minutes.
Salted butter caramel sauce
In a saucepan, dissolve glucose and powdered sugar over low heat without stirring.
At the same time, heat the liquid cream. When the glucose/powdered sugar mixture turns into a beautiful amber caramel, add the hot liquid cream in three batches and stir well to cook the caramel.
Once the caramel is soft, add the semi-salted butter off the heat and whisk vigorously.
Serve the cake covered with salted caramel with butter.
