Irish Colcannon



St Patrick's Day, Ireland's national holiday, is fast approaching (March 17). This holiday has become a happy excuse to get out and celebrate no matter where in the world you are.
  
*Ingredients :

°1 kg  potatoe
°1 small green cabbage, thinly sliced ​​(about 3 cups)
°4 green onions
°25 cl of milk (approximate)
°butter
°salt pepper

Peeled potatoes, cutting them to quarters, putting them in Dutch oven, covering with water & salt & bring to boil. Cooking for 20 min, to potatoe are soft.
Boil chopped cabbage for 2 minutes in boiling salted water (optional). Filter carefully.
In  skillet, melting butter and cooking cabbage without color until soft.
When the potatoes are cooked, drain, return to the pot and mash with the addition of milk and butter until smooth and creamy. To your taste, you can add milk or butter.
Chop green onions with white and green. Add them to the mash with cabbage. Mix the pepper and salt again if necessary.
Serve immediately with butter.
You can serve the colcannon with sausage or slices of bacon.
