Irish Nachos



A delicious recipe from the Irish Nachos Pub...Extra Bacon!

*Ingredients :

°1.5 pounds (0.68 kg) russet potatoes, washed, brushed, and cut into rings
°2 tablespoons olive oil
°1/2 teaspoon dried rosemary
°1/2 teaspoon thyme, salt and pepper (to taste)
°1 cup (250 ml) shredded cheddar cheese
°5 slices of bacon, cooked and crumbled in tomato sauce (pico de gallo)
°2 green onions finely chopped
°1 tablespoon fresh coriander

*Preparation:

Preheat oven 450°F (232°C). Add the chopped potatoes to a large bowl. Pour olive oil, add spices and herbs. Good mixing. Spreaading potatoes on  sheet line with parchmentpaper. Bake for 20 minutes, then flip and bake for another 20 minutes. Add cheese and bacon. Cook for another 4 minutes, in order to melt the cheese. Transfer it to a serving plate with sour cream in the middle, a little chutney, green onions and cilantro!
