Fried Fish





*Ingredients list:

°Half a cup of yellow cornmeal.
°¼ cup all-purpose flour.
°1½ teaspoons seasoned salt.
°A teaspoon of black pepper.
°A teaspoon of cayenne pepper.
°A teaspoon of lemon juice.
°A teaspoon of paprika.
°2 large whole eggs.
°2 teaspoons of hot sauce.
°500 grams of catfish fillet.
+For service, I use:
°Lemon wedges.
°Tartar sauce.
°hot-sauce;

* Methods :

Step 1:
To get started, combine the cornmeal, flour, salt, black pepper, cayenne pepper, lemon juice, and smoked paprika in a large brown bag or ziplock bag and shake until well combined. 
Step 2:
In a deep pie plate or large, shallow bowl, whisk together eggs and hot sauce until well blended.
Step 3:
Next, you can add each fillet to the beaten eggs and turn them over to cover both sides, then transfer them to the cornmeal breadcrumbs and shake vigorously to coat them well with the breadcrumbs. 
The fourth step:
Now, place the slices on the baking tray that has been sprayed with cooking spray, and repeat the process with each slice.
Fifth step:
In this step, you need to let the fish rest for 10 to 15 minutes in the fridge before taking it out of the fridge.
Sixth step:
Next, you need to pour approximately 4 inches of oil into a large Dutch oven, saucepan, or deep skillet and heat it over medium-high heat until the temperature reaches about 340 degrees.  Remove from fire and set aside.
Seventh step:
Finally, fry the fillets in batches until golden brown, then remove from the pan and drain on wire racks or paper towels.
